Pairing coffee and brew methods. Most of you will have a favourite method of brewing and mine's filter coffee. So, that's where I start with absolutely everything. My next consideration would be your mood or your emotion on the day. Some brew methods are suited better to when you're in a bad mood and you don't really want to fuss around a lot. For example, I'd choose a cafetiere if I was in a particularly bad mood because it's easier, I don't have to think about it technically. Some methods of brewing will promote different aspects and qualities of coffees that you may emotively be hooked into on that day. For example, on sticking with a cafetiere or a full immersion brew, these assist in getting lots of body out of a coffee. If you want something that's concentrated and abrupt, you might choose espresso. Or like me, if you want something that's open and transparent, you may choose something like a filtration brew, a Hario V60 or other. And then there are these weird and wacky brew methods that hybridise things like the Clever Dripper that have this best of both worlds type of situation. So, the emotions on the day, your feelings, may promote the type of brew methods in which to choose. Now you've got to choose a coffee to pair with the apparatus and your mood of the day. And choosing a coffee is highly subjective. I like to think that coffees with lots of acidity, so that's on our bags when you have things like lemon or grapefruit is the first word on the flavour descriptors. That gives you an idea of the type of acidity, how bright the coffee is going to be. And I tend to find that coffees that portray lots of acidity, or words that suggest acidity, perform better in brew methods that are more dilute so filtration type of brewing. Those coffees that have words like caramel, dark chocolates any type of chocolate to be fair or nuts. I think they lend themselves best to brew methods that increase intensity in texture like the cafetiere or the espresso. Of course, as I said, this is all subjective and it's for you to test all of this stuff out. Think about how you feel on the day. Have a bunch of different brew apparatuses, test some different coffees in each one of those and you'll soon deduce which coffees suit the brew method the best on that day.
