Ingredients: Carrot – 500 g Ghee – as required Milk – 1.5 liter Cardamom – 2–3 pods (crushed) Sugar – 100 g Cream – 100 ml (optional) Almonds – chopped/crushed Black raisins (only raisins) Cashew nuts Pista (pistachio) Pumpkin seeds Silver vark (for garnish) Method: 1. Peel the carrots and grate them. 2. Heat ghee in a heavy pan. Add the grated carrots and cook for 10 minutes. 3. Add 1.5 liters of milk and cook well until the milk dries and is fully absorbed into the carrots. 4. In another pan, heat ghee and add crushed almonds, black raisins, cashews, pista, and pumpkin seeds. Roast until golden brown. 5. Add the roasted dry fruits to the halwa and mix well. Add sugar, cardamom, and cream (optional). Cook for a few more minutes. 6. Garnish with silver vark. Your Gajar Ka alwa is ready to serve. Enjoy!
