Normandy is also a country of rich historic and architectural heritage, located in "Pays d'Auge". Chateau du Breuil is known for there Calvados ( brandy ) . The apple is the basic ingredient to make quality Calvados.Calvados often nicknamed Calva, is a brandy from Normandy in France, made from apples or pears, or from apples with pears. Calvados comes from the distillation of cider obtained from the fermentation of apple must. Apple cider may or may not be mixed with pear cider, called poiré in French (from poire , pear). Calvados varieties depend on the combination of apples used, rich in tannins, of which 150 varieties are grown in the apple orchards of Normandy. They are classified into 4 categories: sweet, bitter sweet, bitter and sour. Some varieties are not edible.The fermentation of the must is a natural fermentation of 6 weeks, after which a cider of 5 to 6 degrees is obtained. After subjecting the cider to a simple or double distillation process in stills , the resulting brandy has between 40 and 42 degrees of alcohol . Depending on the AOC, two types of stills are used: . The column or column alembic (called column still or Coffey still in English) allows a single continuous distillation. It is also used to obtain wheat or corn whisky. The resulting calvados has a clean, fresh fruity flavor and reaches maturity at 12 years, so it is not usually aged longer. . The alembic à repasse or charentais (called pot still in English). It is called "calienta vino" in Spanish because the cider or wine to be distilled is directly heated. It is used for double distillation and is traditionally used for cognac from the Charente region of France and for Irish and Scottish malt whiskies .
