These are good once they have had a chance to warm at room temperature for a few minutes, otherwise they are hard on the teeth and the palate. Ice cream has a tendency to squish out the sides when you eat it too. I will be trying a more traditional style ice cream sandwiches that uses cookies. Found this recipe here: http://www.pillsbury.com/recipes/stra... 5 cups miniature marshmallows 1/2 cup unsalted butter (if you use salted, omit the added salt in this recipe) 1/2 teaspoon salt ( I omitted this because I used salted butter) 5 cups Rice Chex® cereal or Crispix cereal (or any other kind of cereal) 3 cups ice cream, softened Line bottom of 13x9-inch pan with cooking parchment paper, I also greased the parchment. In a large add the butter (and salt if you are using unsalted butter) over low heat until it melts and then add 4 cups of the marshmallows and cook on low about 8 minutes, stirring constantly, until melted. Stir in cereal until almost coated; stir in remaining 1 cup marshmallows. Using greased rubber spatula, evenly scrape mixture into pan and spread evenly. Refrigerate about 30 minutes or until easy to handle. Turn pan upside down to remove cereal layer; discard parchment paper. Cut into 12 rectangles, 4x3 inches each. Working quickly, spread 1/2 cup of the ice cream onto 1 rectangle; top with another rectangle. Repeat to use up rectangles and ice cream. Freeze on parchment paper-lined cookie sheet at least 1 1/2 hours until firm. Wrap sandwiches individually in plastic wrap and store in freezer. *note* I suggest cutting these in half after you assemble them and they have hardened a bit. I suggest that you leave them out to warm up a bit (just to soften the icecream and cereal a bit) they can be very hard to eat otherwise.
