Today we’re baking banana red bean mochi cupcakes — oil-free, low in sugar, soft, chewy, and delicious. 1. Preheat the oven to 350°F / 180°C. 2. Mash 3 ripe bananas with a fork. 3. Add 1 cup of cooked red beans (drained as much as possible). Add 2 teaspoons of brown sugar — skip this if you're using sweetened red bean paste or honeyed red beans. Mix well. 4. Add white sesame seeds, black sesame seeds, and sunflower seeds — 1 tablespoon each. 5. Add 1/2 cup of chopped walnuts. Mix until well combined. (Wearing gloves can help with mixing.) 6. Prepare a silicone mold. Take about 40g of dough, shape into a ball, place in the mold, and flatten/shape by hand. Top each cupcake with 1–2 walnut halves. 7. Place the tray in the oven and bake for 20–25 minutes. Adjust baking time based on your oven’s temperament. 8. Remove cupcakes and let cool until no longer hot to the touch, then demold. The silicone mold makes this easy — no oil needed, and the cupcakes come out cleanly. The baked surface forms clear cracks, but the inside remains gooey and sticky. Bite through the crispy skin into soft, chewy mochi — the more you chew, the better it tastes. Storage & Reheating Tips: • Leftovers can be stored in the fridge. • Mochi will harden when cold — reheat by steaming or microwaving. • For microwaving: Cover with a damp paper towel or cloth, heat for about 15 seconds per side until soft again.
