Rohu or Rui fish is a very tasty fresh water fish found in rivers in South Asia. For this dish, you can also use Katla fish in place of Rohu fish. Chapters 00:00 introduction 00:33 Marinate 01:03 Frying Fish 02:45 Gravy 05:40 End Prep time: 20 minutes Cooking time: 60 minutes RECIPE: INGREDIENTS: To marinate fish: • 7 to 8 pieces of Rohu fish • 1 tsp turmeric powder • Salt to taste To fry fish: • Mustard oil – enough for frying To make gravy: • Whole spices – 2 bay leaf, Cinnamon bark – 1 inch, Cardamom – 3, Cumin seeds – ½ tsp • 1 and ½ medium sized onion, to make paste • ½ medium sized onions, chopped • 2 medium sized tomatoes, to make paste • 2 tsp Ginger paste • 1 tsp Turmeric powder • 1 tsp Red chili powder • 2 and ½ tsp Cumin powder • 1 and ½ tsp Coriander powder • ½ cup Curd, beaten well • Salt to taste • 2 – 4 slit Green chilies PREPARATION: To Marinate the Fish: • Wash the fish and drain water. • In a bowl take the fish pieces and rub 1 tsp of turmeric and salt to taste on them. • Toss well and properly coat the fish pieces with turmeric and salt. You can use a glove as turmeric will stain your hands. • Keep aside for 15-20 minutes. To fry the Fish: • Take a kadai or a pan and add mustard oil when the pan becomes hot. Add enough mustard oil to shallow fry the fish pieces. • Smoke the oil and add the fish pieces. • Now lower the flame to medium and fry the fish pieces till it turns light brown/golden color on both sides. • You can check if the fish pieces are cooked on the inside by inserting a fork at the thickest point and gently twisting. A well-cooked Rohu fish meat will appear whitish in colour and will lose its translucent or raw appearance. • Remove it and take it out on a paper towel. Keep aside. To make Gravy: • In a grinder prepare onion paste and tomato paste separately and keep aside. • In a bowl add cumin powder, coriander powder, chili powder, turmeric powder, little water and stir into a thick paste. Do not make it runny. Keep aside. • In same kadai or pan where you fried the fish, remove excel oil and keep 3 tsp oil for preparing the gravy. • Once the oil is heated, add the whole spices - Bay leaf, Cinnamon stick, Cardamom and Cumin seeds. Let the cumin seeds splutter. • Add the chopped onion, stir fry for a minute. • Then add the onion paste and fry for 3 to 4 minutes or till the onion paste becomes pinkish brown in colour. • Add the ginger paste and cook till the raw smell of the ginger disappears. • Now add the tomato paste and salt to taste, cover the pan with a lid and cook for 2 - 3 minutes. • Add the masala paste to the pan and cook it till oil oozes on the surface. • Now lower the flame and add the beaten curd and cook for 1 minute. • Then add around 2 - 3 cups of water and bring it to a boil. • Cook it on high flame till the water reduces to 2/3rd level or till you get the desired consistency. • Now add the fried fish pieces and slit green chilies. Cook it for a minute on high flame. • Turn off the heat and let it sit for 5-10 minutes before you serve it. • Serve it hot with plain rice or jeera rice or any pulao. ENJOY ROHU KATLA ! NOTES: When frying the fish, remember to shallow fry the fish. Deep frying the fish will make it hard and the pieces will not soak the gravy. To prepare Katla kalia, you can follow the same preparation method. Depending on the number of fish pieces you can adjust the onion and tomato paste quantity. Also, some people like a thin runny gravy and some prefer a thicker gravy. Accordingly, you can adjust the quantity of water to make gravy of desired consistency.
