This is how I defeated Nightmare King Grimm in Hollow Knight

Nightmare King Grimm is simply put one of the best bosses in the game. He was added later as part of the Grimm Troupe DLC and it is one of the fastest bosses in the game and when you face him the first time it's very easy to feel overwhelmed with the different moves and attack patterns he has but ultimately you realize it's just a joy to fight against this dude. Also, I love the slight reference to Castlevania with this Boss, putting aside the obvious vampirish look and feel of Grimm, some of his attacks are similar to Dracula's classic moves.
