The guys at Dark Matter actually distil their Rum from Scratch, then flavour it up with real ingredients, such as Ginger, Peppercorns and All Spice Berries. No Flavour compounds, no artificial flavourings. As a result, the flavours are big and bold. Big Ginger Notes hit you in the face. A lovely warming Peppery taste. And a rather warming finish. As far as mixing it goes, while Coke and Ginger beer are really lovely, this really lends itself to Cawston Press Apple & Ginger Juice. It is one of my favourite Rum and Mixer drinks of all time.
