Here's what you'll need: 3 large eggs 1/2 cup brown sugar (100g) 1/2 cup sugar (100g) 1/3 cup oil (80ml) 2 tsp vanilla extract (10ml) 1 cup pure cocoa powder (80g) 1 tsp instant coffee (3g) 1 and ¾ cup all purpose flour (220g) 2 tsp baking powder (8g) 1/2 tsp salt (3g) For the chocolate lava: 1/2 cup semi sweet choco chips 1/2 cup hot cream (125ml) 1 cup powdered sugar / icing sugar / confectioners sugar This recipe yields 15 to 17 lava crinkles 1. In a bowl, mix together eggs, sugar, brown sugar, oil and vanilla. Mix until well incorporated. 2. Add pure cocoa powder. Mix. Then add flour, baking powder and salt. Mix until combined. 3. Cover and let it sit in the fridge for at least 4 hours or 1 hour in the freezer. 4. Scoop about 50 grams or 3 tbsp of the batter. Dredge in powdered sugar. 5. Place in a lined muffin pan. Press on top to leave a pocket for chocolate lava. 6. Bake in a preheated oven at 180°C or 350°F for 12-14 minutes. 7. Let it cool down completely. 8. For the chocolate lava, heat cream before boiling point then add to the semi sweet chocolate chips. Mix until chocolate is melted. 9. Spoon the chocolate lava in the pockets. 10. Serve and enjoy!
