Recipe: Wheat Kulcha (Gehu Ke Kulche) Ingredients: • 2 cups Wheat Flour (Gehu ka aata) • 1 tsp Sugar • 1/2 tsp Baking Powder • 1/4 tsp Baking Soda • 1/2 tsp Salt • 1 tbsp Oil • 1/4 cup Curd (Dahi) • Water (as needed) • Nigella Seeds (Kalonji/Black Sesame) • Fresh Coriander leaves Instructions: 1. Prepare the Dough: In a bowl, take the wheat flour and add sugar, baking powder, baking soda, salt, oil, and curd. Mix everything thoroughly. Gradually add water and knead it into a semi-soft dough. 2. Rest the Dough: Knead the dough well, then cover it and let it set for about 30 minutes. Once rested, knead it slightly again to smooth it out. 3. Roll the Kulcha: Take a small ball of dough and roll it out into a circle, ensuring it is not rolled too thin. Sprinkle Nigella seeds (Kalonji) and fresh coriander on top. Dust with a little dry flour and roll it again gently so the toppings stick and the edges are not too thick. 4. Cook on Tawa: Apply water to the back side of the kulcha and place it wet-side down on a hot non-stick tawa. Apply a little water on the top surface as well. 5. Steam and Roast: Cover the pan and cook on medium flame for 2 minutes until bubbles appear. Then, flip the tawa upside down over the flame to roast the top of the kulcha directly, giving it a tandoori flavor and charred look. 6. Serve: Once cooked, the kulcha will release from the pan easily.
