I'm Becky, a BLE social media team member, here to give you a brief food preparation demo and have a little bit of live chat. Today I'm making Fresh Corn & Black Bean Salad from the Bright Line Eating Cookbook. RECIPE Number of servings: 1 Serving size: Entire Recipe INGREDIENTS 2 oz fresh corn 2 oz cherry tomatoes, halved 1 oz diced peppers 1 oz diced red onion 2 oz cooked quinoa 3 oz canned black beans, drained and rinsed DRESSING INGREDIENTS 0.5 oz extra virgin olive oil Juice of 1/2 lime 1/4 tsp chili powder Salt & black pepper Pinch of fresh cilantro (optional) PREPARATION Toss the corn, tomatoes, peppers, quinoa, onion, and beans in a bowl. To make the dressing, whisk together the oil, lime juice, and chili powder in a small bowl. Season with salt and pepper. Toss the salad with the dressing.
