[The recipe for this delicious vegan creamy mushroom soup is below] In today's video, I am showing you what I like to do on my day off while living on Islay. Calum was away for a week to do whisky tastings in Sweden so I thought this was a perfect opportunity to shoot a video like this! I am taking you today to Port Ban, the cute wee beach where I do most of my swimming. I also show you my favorite childhood dish - creamy mushroom soup but made vegan and Lossit Bay - a spectacular beach that will take your breath away. Thank you for watching! __________________________________________________________ Vegan Creamy Mushroom Soup: • one box of mushrooms • carrot • onion • 3 cloves of garlic - I didn't use it in the video because I run out of garlic but highly recommend adding it • 2 veggie stock cubes or 800ml of homemade bullion • 150ml of vegan cream; I used Provamel Organic Soya cream but you can also use Oatly Creamy Oat, Alpro Single Cream or Elmlea Double 100% Plant • 3 tbsp of Nutritional Yeast Flakes; I love yeast flakes so much because they add creamy and cheesy flavor Chop mushrooms, a carrot, and an onion. Heat up vegan butter or oil in the pot. Add onion and minced garlic, fry them for about a minute and add a chopped carrot. Once the carrot is soft add all the mushrooms. Fry everything together until mushrooms are golden. Add two stock cubes with 800ml water or add your homemade bullion. Let it simmer for about 15 - 20 minutes. Prepare the cream & yeast mixture: Warm-up your cream in a small pot/cup and add yeast flakes. By warming up the cream, the yeast flakes will melt better. I didn't do it in the video because I was lazy but it does make a big difference in consistency. Add your mixture to the soup, stir it in for a couple of minutes and it's ready! You can also use a blender to have a nice cream soup. Season it with a little bit of soy sauce and some dill or parsley.
