Gingerbread Cookie Bars (didn't actually get around to making this one but it looks great!) - https://sallysbakingaddiction.com/gin... My Chewy Ginger Molasses Cookies: Ingredients 1 1/4 cup unsalted butter at room temperature 2 cups white sugar 2 eggs 1/2 cup molasses 4 cups all purpose flour 1/2 tsp salt 4 tsp baking soda 2 tsp ground cinnamon 1 tsp grated fresh ginger or powdered ginger 1/2 tsp ground cloves 1/3 cup white sugar for rolling Cream wet ingredients (butter, eggs and molasses) with sugar. Combine the dry ingredients (flour, salt, baking soda, cinnamon, ginger and cloves) and mix with the wet ingredients on low speed until there are no streaks. Cover and refrigerate the dough for one hour and preheat your oven to 350 degrees. Remove the dough and roll into 36 balls, baking each dozen for 10-11 minutes. My Peppermint Chocolate Chunk Cookies: 3/4 cup unsalted butter, softened 1 cup brown sugar 1/4 cup granulated sugar 1 egg 2 tsp vanilla extract 1 1/2 tsp peppermint extract 2 cups flour 2 tsp cornstarch 1 tsp baking soda 1/2 tsp salt 1 cup mint chocolate chips OR mint chocolate chopped 1/2 cup milk chocolate chips INSTRUCTIONS 1. Preheat oven to 350 F 2. Cream together butter + sugars until smooth. Add egg, vanilla, peppermint and combine. 3. Stir in flour, cornstarch, baking soda + salt. 4. Stir in chocolate chips. 5. Roll + place on a prepared baking sheet. Bake for 10-12 minutes until edges are golden brown - don’t overbake (they will still look fluffy in the oven - this is the goal! Don’t leave in too long).
