Ingredients : 600 gms Pork with fats (cut into 1- inch square pieces) 15 to 18 (20 gms) Garlic cloves (finely chopped) 1 tbsp (8 gms) Ginger (finely chopped) 2 to 3 Green Chillies (chopped) 2 tsp Kashmiri Red Chilli Powder (use as per your spice tolerance) 1 tsp Black Pepper Powder ½ tsp Salt (as per taste) 1 Bay Leaf (tej patta) 2 small sticks Cinnamon (dalchini) 1 Star Anise (chakra phool) Splash of water (just to help steam and soften the pork) Other Ingredients : 2 to 3 tbsp Cooking Oil (use as per your diet restrictions) 2 tbsp (25 gms) Garlic cloves (finely chopped) 3 to 4 Dried Red Chillies 1 small (15 gms) Spring Onion Bulbs (finely chopped) 2 medium (100 gms) Onion Petals (cut the onions into quarters and separate the layers into petals) 1 medium (90 gms) Green Capsicum (cut into cubes) 1 tbsp Dark Soy Sauce (can use light soy sauce) 1 tbsp Tomato Ketchup 1 tbsp White Vinegar 2 tbsp Spring Onion Greens (chopped) 2 to 3 Green Chillies (slitted) 1 tbsp Sesame Oil (enhances aroma and gives that authentic restaurant-style finish) ✨ Cooking Tips The number of whistles depends on pork tenderness.
