Peach Melba Serves two people. Peach Preparation: 1. Take your knife and add make an "x" mark on the bottom of the peaches so you can easily peel off the skin. 2. Make your syrup with water, sugar and rosemary, let it come to a boil. 3. Once the water has boiled, add your peaches and let sit for 2 minutes. 4. Remove the peaches from the boiling water and place them in an ice cold bath for 30 seconds. 5. Dry the peaches and peel with your knife. Cut them in half or quarters and put them in the fridge. Raspberry and Lime Fruit sauce preparation: 1. Add one pint of raspberries to the blender with 4 Tbsp of sugar, 1/2 juice of a lime, 1/2 zest of a lime and blend until smooth. 2. Then strain the mixture using a colander. Set sauce aside in the fridge. Whipped cream preparation: 1. Add 100 gram of heavy cream (30% fat) and add to a metal bowl, whisk until thick. Add half a tsp of vanilla, continue to whip, then add 1.5 Tbsp of sugar and continue to whip until you get peaks. Set whipped cream in fridge. Assemble the dessert with vanilla ice cream and add toasted almonds.
