The best part is that everything can be prepared in advance a day before and stored in the fridge to assemble later. The platter itself can be prepared few hours in advance. The other good thing is that you can substitute by any salad that you like. Here is how I prepare mine: Cold Rice Salad: Use long grain ice. Boil till tender, drain, and let cool completely. Add about a cup of mayonnaise, two can of tuna in oil, sweet corn, and chopped olives. Mix really well pour in the desired container and store in the fridge. The container you chose to use will be the same shape the rice salad will be eventually. You can use a bowl or any cake pan instead. Boiled Vegetables salad: Trim the ends of the green beans and chop in half. Peel the potatoes and the carrots and cube. Boil till tender. You can boil them altogether or separate. For the vinaigrette, add 2 cloves of minced garlic to 2 tablespoons of lemon juice and 2 tablespoons of chopped parsley, and about 1/4 of a cup of olive oil and a pinch of salt and mix very well. The raw Vegetable Salad: Chop and peel Two tomatoes, 2 cucumbers, 1 small onion, and a quarter or a bell pepper. Mix very well 2 tablespoons of lemon juice, 1/4 of vegetable oil, 1/2 teaspoon of salt and pour over the salad. You can decorate the platter by any way you wish, you imagination is the limit. but I do show how I created my decoration from raw vegetables in the video.
