⬇️⬇️English recipe follows⬇️⬇️ 香芋雞扒鑊仔飯 材料: 芋頭(約一磅)一件 急凍雞扒2塊 甘筍一條 雞蛋3隻 白米2膠嘜 鮮奶 處理: 1. 雞扒,清水解凍。 2. 雞扒已解凍,倒去水分,加入粗鹽2茶匙乸10分鐘,除去雪味、腥味,及加入少許鹹味,清水沖洗乾淨,擎乾水,用廚紙索乾。 3. 雞扒,加入調味料: a. 蠔油半湯匙 b. 生抽半湯匙 c. 胡椒粉適量 d. 紹興酒半湯匙 撈勻,加入生粉一茶匙,撈勻。 4. 芋頭,去皮。 5. 甘筍,去皮,斜切厚片。 6. 芋頭,一半,切細塊,一半,切粒。 7. 白米,放鑊仔內,清水沖洗乾淨,加入一半芋頭粒,剩下一半,放碟上。 8. 鑊仔,加入清水高過材料面一吋,冚蓋。 烹調: 1. 大火煲滾鑊仔。 2. 另一邊,在鑊內燒熱油一湯匙,打勻雞蛋,炒成滑蛋,放碗內。 3. 雞扒,放鑊內,中慢火煎。 4. 白米已滾起,撈勻白米及芋頭粒,鋪上芋頭塊及甘筍塊,冚蓋,轉最慢火,慢慢煮熟。 5. 雞扒,一面已煎至金黃色,反轉繼續煎。 6. 雞扒,兩面已煎熟,放碟上。 7. 洗乾淨鑊。 8. 芋頭粒,放鑊內,加入清水200毫升,大火滾起,壓爛,加入糖一茶匙,攪勻,加入鮮奶20毫升,攪勻。 9. 飯已煮好,芋頭塊及甘筍塊,放碟上,冚蓋。 10. 雞扒,切開一件件,放同一隻碟上。 11. 芋頭汁已滾起,淋在飯上。 12. 雞蛋,放碟中間。 13. 完成,可享用。 Chicken steak and taro rice with cooking pan Ingredients: Taro (about 1 lb) 1 No. Frozen chicken steak 2 Nos. Carrot 1 No. Eggs 3 Nos. Plain rice 2 plastic cups Fresh milk Preparation: 1. Chicken steak, defrost in tap water. 2. Chicken steak has been defrosted, pour away water. Add in 2 tsp of cooking salt, season for 10 minutes, to remove unpleasant smells and add some salty tastes to it. Rinse thoroughly. Drain. Dry with kitchen towels. 3. Chicken steak, add seasoning: a. Oyster sauce 0.5 tbsp b. Light soya sauce 0.5 tbsp c. Pepper appropriate amount d. Shaoxing wine 0.5 tbsp Mix well. Add in 1 tsp of tapioca starch, mix well. 4. Taro, get it peeled. 5. Carrot, get it peeled. Slantly thickly slice. 6. Taro, half is to be cut in small pieces. Half is to be diced. 7. Plain rice, is to be put in a cooking pan. Rinse thoroughly. Add in half of taro cubes. Another half is to be put on plate. 8. The pan, add in water above the ingredients for an inch. Cover up the pan. Steps: 1. Heat up the cooking pan. 2. On the other side, heat up 1 tbsp of oil at high flame in wok. Get the eggs whisked. Fry them into scrambled eggs. Put in a bowl. 3. The chicken steak, put in the wok. Fry at medium-low flame. 4. Rice has been boiled up, stir the rice and taro cubes well. Cover up the pan. Turn to the lowest flame and continue to cook well. 5. The chicken steak, one side has been fried into golden yellow, flip over and continue frying. 6. The chicken steak, both sides have been fried well, put on a plate. 7. Rinse the wok. 8. Taro cubes, put in the wok. Add in 200ml of water, heat up at high flame. Get them squashed. Add in 1 tsp of sugar, stir well. Add in 20ml of milk. Stir well. 9. Eggs, put in the middle of the plate. 13. Complete. Serve Only need half of taro, two chicken steak and three eggs, you can make yummy rice.
