This soft and chewy protein cookies is very easy to make. Low carb, low calories and packed with protein makes great snack any time. Ingredients: 1. 1/2 cup peanut butter or any other nut butter 2. 1/4 cup coconut sugar or light brown sugar 3. 1/4 salt 4. 1 large egg 5. 1 large egg white 6. 1/2 tsp vanilla extract 7. 1/4 tsp baking soda 8. 1/2 cup (36g) whey protein powder 9. 2 tbsp coconut flour 10. 3 tbsp mini chocolate chips Method: 1. Place a rack in the center of your oven and preheat the oven to 350F (180C). Line a baking tray with non-stick baking paper. 2. In a bowl combine the peanut butter, coconut sugar, salt, egg, egg white and vanilla extract. Mix until ingredients are well blended. Sprinkle the baking soda over the top. With a spatula or large spoon work in the protein powder and coconut flour until well combined. If the mixture seems very dry first continue to mix it will come together. 3. With a spoon, portion the cookie dough by tablespoonfuls and drop onto your prepared baking tray (you will have 12-14 cookies in total). Gently flatten the tops of the cookies with your fingers, as they will not spread, but will puff up during cooking. Press chocolate chips on top of cookies. Bake for 5-6 minutes, until the edges are barely golden brown and dry to the touch but the middle seems fairy doughy. Do not overbake. Place the cookie tray on a wire rack and allow the cookies to cool on the baking tray for 3 minutes before transferring them to the wire rack to cool completely down. Makes 12-14 cookies.
