Potato Pancake Instructions: 1. **Prepare the Potatoes**: Slice the potatoes and wash them thoroughly. Pat them dry using kitchen paper. 2. **Chop the Vegetables**: Cut the garlic into thin slices. Dice the spring onions, red onions, and tomatoes into small pieces. 3. **Cook Aromatics**: In a pan, cook the garlic and red onions until fragrant. Set aside, retaining the cooking oil in the pan for cooking the potatoes. 4. **Mix Ingredients**: In a bowl, combine the two eggs with the chopped tomatoes and spring onions, as well as the cooked garlic and red onions. Add 1 tablespoons of water, 2 tablespoons of cornflour, ½ teaspoon white peppers and ½ teaspoon of salt, then mix until well blended. 5. **Cook the Potatoes**: Fry the sliced potatoes in the pan for about 3 minutes. Add 1 teaspoon of salt and ⅓ teaspoon of black pepper while cooking them. 6. **Combine and Fry**: Pour the mixed ingredients over the potatoes and continue cooking for about 2 minutes. 7. **Flip and Finish**: Carefully flip the pancake and cook the other side for less than 1 minutes. 8. **Serve**: Plate the potato pancake and garnish with parsley on top.
