Salty, sweet, soft, smooth, quick, and easy.....it's just perfect!! Ingredients: 90 gr sugar 1/4 tsp salt 250 ml heavy cream/whipping cream 130 ml milk 4 eggs yolk Method: 1. Preheat oven to 180 C. Pour sugar evenly in a heavy-bottomed saucepan over medium heat without stirring. Don't stir!! Allow sugar to slowly melt around the edges of the pan (about 3 mins). When edges start to bubble, shake and swirl pan to dissolve remaining sugar without stirring it (5-6 mins). 2. When sugar is completely dissolved, pour it in a pan. Whisk in heavy cream, salt, and milk. Caramel will cool into a lump, but don't panic. Keep stirring until caramel melts. When caramel has dissolved, remove from heat and let it cool for about 5 mins . 3. After 5 mins, whisk the egg yolks, then whisk in one or two ladleful of caramel mixture to the yolks and stir well. Then mix in the yolks to the remainder of the caramel mixture. Whisk until thoroughly blended. 4. Carefully pour boil water into the baking dish so that it comes halfway up the sides of the ramekins. Divide custard mixture evenly among the ramekins. 5. Bake until custard is set (about 35 to 45 minutes) depending on the accuracy of the oven. 6. Refrigerate at least 1 hour before serving. Serve with a pinch of light salt. #custard #saltedcaramel #caramelpudding
