Wishful Thinking by Dan Lebowitz CRISPY PORK TERIYAKI Ingredients: 1/2 kg pork (shoulder or belly) 1 1/2 tbsp fish sauce 1 tsp ground black pepper 2 tbsp cornstarch Batter 1/2 cup flour 1/2 cup cornstarch 3/4 cup water Sauce 1 tbsp butter 1 tsp minced garlic 1 tsp minced ginger 2 tbsp soy sauce 1/4 cup water 1/4 cup honey 1 tsp chili paste slurry (1 tsp cornstarch + 2 tsp watet) cooking oil for frying Procedure 1. Season the meat with fish sauce, pepper and cornstarch 2. Mix the ingredients for batter. Mix well to form a smooth batter 3. Pour the batter into the meat to coat it before frying 4. Heat the oil in a pan. Meat must be deep fried for a crispier result. Cook meat until golden brown. 5. Remove the meat from the pan to drain excess oil. 6. For the sauce- Saute garlic and ginger. Add the soy sauce, honey, chili paste and a little bit of water. (add water if it's too salty). 7. Add a teaspoon of the slurry to thicken the sauce ( you may add the slurry if you want a thicker sauce) 8. Toss the meat into the sauce and mix. 9. Add the sesame seeds and serve.
