Have some extra veggies in your fridge? Well today we're whipping up some quick and easy veggie fritters that are packed with flavor and super crispy! Vegetable Fritters: Yield: ~ 12 Fritters Ingredients: Fritters: 3 Ea Scallions 1 Ea Medium zucchini, grated 1 Ea Medium carrot, grated 1 Ea Medium potato, peeled and grated (adds natural starch + crisp) ½ Ea Small onion, grated or very finely minced 2 tsp Salt, for drawing water out 2 Tbsp Cornstarch 2 Tbsp All-purpose flour (or sub rice flour for extra crisp) 2 tsp Salt 1 tsp Starchy Water Lemon Crema: 1 Cup Sour Cream 2 Tbsp Lemon Juice 1 tsp Lemon Zest 1 Tbsp Honey 1 tsp Salt Instructions: Shred the zucchini, carrots, potato, and onion on a box grater and set aside. Thinly slice the entirety of the scallions (Whites included!) and add it with the other veg. Sprinkle 1 tsp of salt over the veg mixture and mix well to combine. Let that sit for at least 20 mins so the salt can bring the moisture out of the veggies. Combine all the ingredients for the lemon crema in a small bowl (if you like your crema to be extra lemony then do 2 Tbsp Lemon Juice, if you like a mellow lemon flavor and acidity stick to 1 Tbsp). After 20 mins, squeeze the water out of the veggies using cheesecloth or a clean dish towel. Once the water is removed, Add the remaining 2 tsp of salt as well as the cornstarch and flour to the veggies and mix. Use a large spoon to scoop the veggie filling into a preheated skillet with a shallow amount of vegetable oil. Press the fritters down once you place them into the oil and let them cook for about 2-3 mins on each side or until golden brown. Remove the fritters from the pan and immediately season with salt.
