Store bought sauerkraut is "tasty" but I have to tell you...since I made sauerkraut myself at home in my own kitchen...I have never and will never go back to store bought! Homemade sauerkraut is an excellent way to preserve all that cabbage you've been growing in your garden or maybe that you bought at your local farmers market! Because it's fermented it will last for months in cold storage! In today's video I decided to double my recipe, because we LOVE sauerkraut around here! What you will need: ✅ A big pot to massage your cabbage ✅ A couple of clean mason jars with lids ✅ Roughly 3 TBS of salt (I prefer a good sea salt) ✅ Fermenting weights to add to your jar (or you can use rocks in a ziplock baggy if you don't have weights!) No big deal! ✅ 3 heads of cabbage Here's how to make it: 1. Give your cabbage a good rinse 2. Peal the 1st few outer leaves off (save for later-don't throw away!) 3. Core each cabbage head & slice your cabbage thinly (you can use a food processor if you wish, I apparently like to torture myself & slice by hand!) 4. Next you're going to add your sliced cabbage to your pot. I like to layer the salt in. For example, add 1 head of sliced cabbage to the pot then sprinkle 1 tbs of salt, then add another head of sliced cabbage and add another tbs of salt and so on...you don't have to layer it like this but I like to because all the cabbage is evenly coated with salt. 5. Now you can start massaging your cabbage OR if you're like me, I like to allow my salt & cabbage to rest for 30 min to an hour. This allows the salt to start doing some of the work for you! The cabbage will begin to wilt & sweat, creating that salty brine. 6. Massage your cabbage REALLY good. Squish it, punch it...whatever you need to do to get as much liquid out of the cabbage as you can! 7. Pack your jars. Squish the cabbage down as you go...really pack it in! 8. Fill your jars with the salt brine created from the cabbage. If you don't have enough brine, no worries. **you can make a simple salt brine with 1 quart warm water & 1 tbs of salt, shake it up to dissolve & add it to your jars** 9. Be sure to top the jars off with your brine. All of the cabbage must be submerged to prevent mold from forming. If you have any "floaters" at this point, just take them out. Floaters will form mold & you don't want that. 10. Use your "saved" cabbage leaves from earlier and place them over your cabbage. Squish the leaf down around the edges of the jar to act as a "cover" to keep your cabbage under the brine. 11. Add your weight to the top & put the lid on your jar loosely. Do NOT screw it on tightly because gases are produced during fermentation and can cause your jars to bust. The lids are really just to keep the bugs out! ***I bought my fermenting wights on Amazon, super inexpensive! 12. I like to write the date on my jars. Allow your jars to sit at room temperature for anywhere from 7 days to about 4 wks. This all depends on how warm your house is AND how tangy you like your sauerkraut to be. The warmer your house is, the faster it will ferment. We like ours super tangy so I allow mine to ferment for about 3-4 wks! 13. Once your sauerkraut is done fermenting, remove the weights and cabbage leaves...secure your lid & place it in the fridge. It's ready to EAT! It'll last for months! (Maybe, unless you love it as much as we do hehe!. Note: I like to keep a jar of salt brine in the fridge and always keep my sauerkraut topped off so the cabbage is always submerged.
