Dry Pot!! The Best Chinese Food You've Never Had

Dry Pot is one of my favorite Chinese dishes, and it's one that I didn't know existed until I came to China. You might compare it to hot pot, but the difference is... well, it's dry. Hence the name dry pot I guess. Unlike hot pot, there is no added water. It's made up of a variety of vegetables - like potatoes, lotus root, onions, celery, and whatever else the restaurant likes to include. You choose the type of meat you want - I prefer ribs, shrimp, or chicken wings. Then they mix it all up with a ton of flavor. It'll be a bit spicy, savory, it's likely to include Sichuan peppercorns. The intensity of the flavors are what really make this dish special. It's a very good group meal, as it's one giant platter that's served to the table.
