Smoked Full Packer Brisket On The Pit Boss 1100 Pro

Hey folks in this video I give you a step by step guide on how to smoke a full packer brisket on a pellet grill. Brisket: 1. Trim. 2. Season. 3. Let sit overnight in the fridge. 4. Set your smoker to 195F. 5. Put your brisket on fat side down for about 8 hours. Until the internal temp in the middle of the flat is around 160-165F. 6. Once internal temp reaches 160-165F pull the brisket and wrap in peach butcher paper. 7. Place the brisket back on the smoker and set the temp to 250F. 8. Continue checking internal temp until 200-203. Check to make sure it's tender. Probe should go in like butter. 9. Pull your brisket and rest in an ice chest for 2 hours. 10. Slice and enjoy!!!! Burnt Ends: 1. Slice up a portion of your point into 1" cubes. 2. Coat with rub and bbq sauce. 3. Place back on the smoker for about an hour until the sauce caramelizes. 4. Eat the brisket candy and smile!!!!
