Add chopped tomatoes and cook until soft. Mix in turmeric, red chili, coriander powder, and salt. Add potato cubes and eggplant, stir to coat with the spices. Cover and cook on low heat for 15–20 minutes, stirring occasionally, until vegetables are tender. Garnish with fresh coriander leaves and serve hot.
