A little while ago, I shared some photos of my cold smoker and had some kind comments and questions. I said I would produce a video next time I used it and here's the result. In the past I'd cold smoked some small trout but had always wanted to try smoking a bigger fish. A visit to Avington gave me the opportunity after I caught two 6lb trout. It also happened that I wanted to cold smoke a larger piece of belly pork so I decided to do that at the same time. The fish was cured in a mix of salt and sugar overnight, and the belly went into a cure of salt, pepper, sugar, bay leaves, thyme, garlic and juniper berries for 5 days. The results have been excellent, and given me the excuse to try out my vacuum sealer so I can store the pork and fish in the freezer. If this video inspires others to have a go that's brilliant.
