Food personality and consultant Clark Wolf, who was inducted to the Hall of Fame of the James Beard Foundation that same year, led a vibrant talk with Emeril Lagasse, the late Charlie Trotter, and Norman Van Aken. Each built an empire from a different part of the country—New Orleans, Chicago, and Florida, respectively. (Charlie Trotter’s Restaurant Charlie won Best New Restaurant and a Michelin star that year.) Self-described as “The Triangle,” the chefs discussed how dynamic American food is with its distinct regions and influences from immigrants. Known for coining the term “fusion,” Van Aken pointed out that Americans had worked against the idea that their food was inferior to classic European cooking. “We felt like we were the underdogs,” said Van Aken, who was an advisor in starting the Congress. The panel talked through the dangers of processed food, the rise of celebrity farmers, the culinary playground that is Las Vegas, whether competitions are important, and how food media has changed the industry. “This is a moment of bloggers without editors,” Wolf said. Trotter heated things up more when he leapt out of his chair and exclaimed, "Who in the hell has the time to go online or have a pathetic blog? Do you have a job? What do you do for a living?” And they hadn’t even heard of influencers yet.
