In which our hero learns the subtleties of camera work and learns the value of framing. Courage, friends! THCS will upload once a week, probably on Thursdays. (It's a pilot, so decisions are being made.) An edited version of the episode will be posted, probably on Sundays. This will be called The Cooking Show of Lies. Migas Tacos Recipe: 1-2 tablespoons of neutral flavored oil (I used vegetable oil.) 4 eggs 1 plum tomato (I used two smaller ones. I like tomato in mine) 1 onion (Medium) 2 green onions 1 poblano pepper 1 jalapeno pepper ½ of a red bell pepper 2 cloves of garlic 9-12 corn tortillas (about three more than you think you’ll need. These things are delicious.) Cheese- Chef’s choice. (I prefer cheddar or jack. Or some sort of mystical cheddar jack. Go nuts.) Cholula hot sauce (for serving) Salt (1-2 tsp or two pinches) Pepper (two twists) 1. Crack your eggs into the bowl. If you make a mess, question your decision to make a cooking show on the internet, clean it up, and bravely soldier on. BE BOLD! 2. Add a pinch of salt to the eggs. 3. Dice the tomato. I prefer a bigger dice here because I like tomatoes in this dish. Like with most things, the size of the dice is up to you. GO WILD! (But not with the knife. Be careful with the knife.) 4. Peel and dice the onion and the green onion to your desired specification. I go for a medium dice on the onion and small circular chop on the green onion. – put these in a bowl and set aside. 5. Crush and finely chop the garlic. I toss it in the bowl with the onions. 6. Cut the peppers into ribbons and then dice them. 7. Start heating the tortillas over medium-high heat and monitor them. (This can also be done after you salt the tomato if you can juggle two things at once.) 8. Heat the oil until it coats the pan. 9. Toss in the onions/green onions/garlic over medium heat. 10. Once they’ve softened a bit, toss in the various peppers. 11. Scramble the eggs with a whisk. 12. Once the peppers have softened a bit, add the eggs. 13. Take a handful of tortilla chips in a bowl. Crush them. Add about half to the pan. 14. Throw in your cheese with reckless abandon. 15. Stir/fiddle around with your spatula. 16, Once everything appears to be cooked, add the rest of the chips. 17. Mix. Finish tortillas. Plate. Serve. Be bold! Anyone can cook!
