Here’s how you can bring minor millets closer to your comfort meals.. Foxtail Millet Ambali recipe Step 1 - Add 1/2 of OGMO unpolished Foxtail Millet in a bowl. Step 2 - Add about 4 cups of water in it and bring it to boil in a mud pot. Step 3 - Cook for 7-8 minutes till the grains are soft to touch. Step - Let it cool. Cover the vessel with a muslin cloth and ferment it for 6-8 hours in summer and 12-15 hours in winter. Serve it with a dash of curd, cumin seeds and salt for savory version and add jaggery for sweet version. Notes Use clay pots for better results, the pores in mud pots help in fermentation process. Cover with a muslin cloth to allow good aeration Let ambali ferment for 6-10 hours. Do not over ferment it. Do not add salt or any vegetables while fermenting the ambali Do not heat the fermented ambali as it will destroy the good bacteria. You can add salt or cumin powder just before consuming the ambali. If you are using wholegrain to make ambali use 1:6 or even 1:10 of millet to water ratio. Use the Ambali to make smoothies, porridge or khichdi.
