Ingredients: • 1 lb dark brown sugar (about 2 cups, packed) • 2 sticks unsalted butter • 1 (14-ounce) can sweetened condensed milk • 1 cup corn syrup • 1 1/2 teaspoons vanilla extract • 1/4 cup molasses (optional for extra depth) • 1/4 teaspoon salt • Chocolate candy coating or chocolate chips (for dipping) • Sea salt (for sprinkling) Instructions: 1. Make the Caramel: • In a large saucepan, combine the brown sugar, butter, sweetened condensed milk, corn syrup, vanilla, molasses, and salt. • Stir over medium-low heat until the sugar dissolves, about 15 minutes. 2. Cook the Caramel: • Attach a candy thermometer to the pan, increase the heat to medium-high, and cook until the caramel reaches 244°F, stirring constantly (about 12-15 minutes). This temperature will give you that perfect, chewy texture. 3. Set the Caramel: • Pour the caramel into a greased 9x13 pan, spreading it evenly. • Let it cool for a few hours or until completely set. 4. Cut & Dip: • Once the caramel has set, cut it into squares. • Melt the chocolate candy coating in the microwave in 20-second increments, stirring each time until smooth. • Dip each caramel square in the melted chocolate, letting any excess drip off. • Place the dipped caramels on a parchment-lined baking sheet. • Immediately sprinkle a pinch of sea salt on each piece before the chocolate hardens.
