Today I pulled out a bag of tater tots, some sausage patties, and a bag of frozen peppers and onions, and made some tater tot breakfast bowls. Basically, all the best parts of breakfast over a layer of crispy tater tots, and they double perfectly as meal prep for the week. Here’s how I made them: Baked one bag of tater tots at 400°F for 23 minutes, until golden and crisp. While those baked, I fried up 4 sausage patties, breaking them into crumbles. Added 1 cup of frozen peppers and onions straight into the skillet and cooked until softened. Scrambled 8 eggs with a little butter over low heat until fluffy. Divided the tater tots between 4 containers, then layered on eggs, the sausage + pepper mix, and shredded cheddar cheese. For extra flavor, I added diced tomatoes on the side and sliced jalapeños on top. When I reheat them, I like to drizzle a little chipotle sauce for some smoky heat. If you want to stretch these even further, you can turn them into breakfast burritos! Just reheat the filling, wrap it in a warm tortilla, and you’ve got a quick and hearty breakfast on the go! No soggy burritos here! These tater tot breakfast bowls are easy, filling, and the perfect way to use what you’ve got while clearing a little more freezer space.
