Making Gond ke Laddu (edible gum sweet balls) is straightforward and primarily involves roasting ingredients in ghee and then mixing them to form laddus. The key is to work quickly while the mixture is warm so it binds properly. Ingredients Gond (Edible Gum): 50g (about 1/2 cup) Whole Wheat Flour (Atta): 2 cups (250-500g, depending on desired flour ratio) Ghee (Clarified Butter): 200g (about 1 cup, plus more if needed) Powdered Sugar or Jaggery: 1 cup (adjust to taste) Mixed Dry Fruits: 1/2 cup (chopped almonds, cashews, pistachios, raisins) Ginger Powder: 1 tsp Instructions Roast Dry Fruits: Heat 1 tablespoon of ghee in a heavy-bottomed pan. Add the chopped dry fruits (almonds, cashews, etc.) and fry for about 1-2 minutes until lightly golden and aromatic. Add raisins at the very end and cook for a few seconds until they puff up. Remove and set aside in a large mixing bowl. Fry Gond: In the same pan, heat about 1/4 cup of ghee. Test the temperature with a small piece of gond; it should puff up immediately. Fry the gond in small batches until it is fully puffed up and crispy. Drain the puffed gond on an absorbent paper, then crush it coarsely using a rolling pin or a mixer grinder and add it to the bowl with the nuts. Roast Flour: Add the remaining ghee to the pan. Add the whole wheat flour and roast on a low-to-medium flame, stirring continuously. This step is important and may take 10-15 minutes until the flour turns a golden brown color and releases a nutty aroma. Combine Ingredients: Once the flour is roasted, turn off the heat. Immediately transfer the hot flour to the large mixing bowl with the dry fruits and crushed gond. Add the powdered sugar or jaggery and the cardamom powder. Mix everything thoroughly by hand until well combined. Shape the Laddus: While the mixture is still warm enough to handle, take small portions and roll them into compact, round balls (laddus). If the mixture doesn't bind well, you can add a little more melted ghee. Store: Allow the laddus to cool completely, then store them in an airtight container at room temperature.
