If you love lemon flavored desserts, which if you’re here, you do, this little trick will change the game. Ingredients: • 1 cup granulated sugar • Zest of 1 small lemon Note: You will zest one lemon per one cup of sugar. I.E. if your recipe calls for 2.5 C of Lemon Sugar then you zest, 2.5 lemons. Step 1: Prep the Lemon First things first wash your lemon thoroughly. Since we’re using the zest, we want to make sure it’s clean and free from any wax or residue.” Step 2: Zest the Lemon Next, zest the lemon directly into your sugar. Use a fine grater or microplane to get the outer yellow peel. The zest is where all those essential oils live. Avoid the bitter white pith underneath. Step 3: Combine and Massage Now comes the fun part, massage the zest into the sugar. Use your fingertips to rub the zest into the granulated sugar. This releases all those aromatic lemon oils, making the sugar fragrant and vibrant. Be sure to break up any clumps for an even texture. Step 4: Store and Marinate Once the sugar and zest are fully combined, transfer it into an airtight container. Let it sit for at least 4 hours, but overnight is even better.
