Goan Chanayacho Ros with Tender Jackfruit l Kuvlo Ghalun Chanya Ros #konkanirecipe @GoanSpiceHouse #chanaros #tenderjackfruitrecipe #vegrecipe #goanrecipe #authenticrecipe #konkanifood #goanspicehouse #recipe #cooking INGREDIENTS: To pressure cooked Tender jackfruit pieces – 3 cups (100 gms) Water – ½ cup Turmeric powder – ¼ tsp Salt to taste Oil – 2 tsp To pressure cooked White vatana / pea– 1 cup Water – 1 cup Salt to taste For Coconut Masala Paste Oil – 2 tbsp Garlic cloves – 10 pieces (small size) Ginger – 1 inch Green chilli - 1 Chopped onion – 1 big size Chopped tomato – 1 medium size Freshly grated coconut – 1 cup Fresh coriander leaves – ¼ cup Curry leaves Turmeric powder – ½ tsp Goan garam masala – 2 tbsp Cooked chana / white vatana – 2 to 3 tsp Water as per requirement For tadka Oil – 2 tbsp Cumin seeds – 1 tsp Crushed ginger garlic – 2 tbsp Curry leaves Chopped onion – 1 big size Chipped tomato – 1 medium size Salt to taste Water as per requirement Small piece of jaggery Chopped fresh coriander leaves METHOD/PREPARATION: Step 1: pressure cook white vatana / chana Thoroughly wash and soak in water white vatana overnight. Next day, pressure cook with 2 to 3 whistles or until properly cooked. Once cooker comes in normal temperature, open the cooker lid and transfer the cooked chana / vatana in a bowl and keep it aside. Step 2: cut and pressure cook tender jackfruit rub coconut oil to your hand and knife before cutting tender jackfruit to prevent the sticky latex from sticking. Cut stem and discard. cut jackfruit into half from middle then into quarters for easier handling. Use tissue paper to remove sticky latex. Cut outer layer and inside core (white part in the centre cut it out from each piece). cut little bigger size pieces. Immediately Transfer it in a bowl of water and keep it for 10 to 15 minutes. this process helps to avoid stickiness and darkness of tender jackfruit pieces. After 15 minutes wash 2 to 3 times in clean water, then transfer in pressure cooker, add turmeric powder, salt to taste, 1 tsp oil, ½ cup of water and pressure cook by 1 whistle only, don’t overcook. Transfer in a bowl and separate water to use for further cooking process. Step 3: roast grated coconut and make a masala paste In a pan, add oil. Roast ginger garlic until raw smell goes away. Add chopped onion and saute until light golden in colour or until become soft. add chopped tomato and green chilli and saute until tomato become soft. now add grated coconut, fresh coriander leaves, curry leaves and roast until aromatic or light golden in colour. once colour started changing switch off the flame and allow it to cool down completely. Transfer in a grinder jar, add turmeric powder, goan garam masala, cooked chana, water as per requirement and make a semi fine paste. Step 4: tadka and final ros In a pan or kadai, heat oil, add cumin seeds, crushed ginger garlic, curry leaves and Saute until raw smell goes away. Add chopped onion and saute until translucent. Add chopped tomato, chopped fresh coriander leaves and saute until tomato become soft. now add ground paste and add water to adjust consistency of gravy. Mix well and cook for 5 to 6 minutes on medium to high flame. after 5 to 6 minutes add pressure cooked chana / white vatana. Mix well, cover and cook for 10 to 15 minutes. once ros become little thick, add cooked tender jackfruit pieces, jaggery and salt to taste. Mix well, cover and cook for 5 minutes more. After 5 minutes switch off the flame and add finely chopped fresh coriander leaves. Serve with steamed rice, chapati, pav or poee.
