Preserving Food Every Day Week 1!

Welcome to week 1 of the every bit counts challenge hosted by Jessica at ‪@threerivershomestead‬ and I have been busy freezing, canning, dehydrating and fermenting and I can't wait to share everything with you this month! This week I made beef stew, stewed tomatoes with vegetables, amish refrigerator pickles, corn and tomato salsa and I also have an easy way to freeze your leftover bananas for recipes that is so awesome! Amish refrigerator pickles Add 7 cups unpeeled sliced cucumbers to a jar Add 1 c onion and 1 c peppers 1 Tbsp salt 1 cup vinegar 2 cups sugar (adjust to your preference) 1 tsp celery and mustard seed Mix brine and boil to melt the sugar then pour cooled brine over veggies Will keep for 2 months
