On this Episode of cooking every national dish, Char Siu from Hong Kong. Char Siu from Hong Kong Ingredients. -1.5 kg pork belly slab 3 red fermented bean curds 6 Tbsps oyster sauce 3 Tbsps hoisin sauce 6 Tbsps red wine 3 Tbsp Shaoxing wine 3 Tbsps garlic salt 3 Tbsps five spice powder 12 Tbsps brown sugar 6 Tbsp soy sauce 8 Tbsps honey red food dye optional cut the pork belly in half and then proceed to tenderize it by using a tenderizer or stabbing it a lot with a fork. After that tenderize it using a hammer. Set aside. in a bowl using a fork smash the red fermented bean curds. Then combine it with 6 Tbsps oyster sauce, 3 Tbsps hoisin sauce, 6 Tbsps red wine, 3 Tbsps Shaoxing wine, 3 Tbsps garlic salt, 3 Tbsps five spice powder, 12 Tbsps brown sugar, 6 Tbsps soy sauce and optionally 3 to 4 drops of red food coloring. in a Ziploc bag add the meat and the marinate. Massage it together and keep in the fridge overnight. Take the meat out of the fridge 1 hour before cooking. line an oven tray with aluminum foil and set a rack on it. Lay the meat fat side up, add some water to the bottom of the tray and cook in the oven for 15 minutes at 425 F. meanwhile warm up the leftover marinate in a pot or microwave. in a different container warm up 8 Tbsps of honey and 1 Tbsps of water until the honey slightly reduces in thickness. Optionally add 4 drops of red food dye to the honey. take the meat out, using a brush lather both side if the meat with the meat marinate and put the meat back in the oven for 15 mins fat side up. again, lather both sides of the meat with the marinate and add it back in the oven for 15 mins fat side down. take the meat out and now lather both sides with honey and put it back in the oven for 10 mins fat side up. take the meat out and lather it again with honey, and put it back in the oven fat side up but at 450 F for 10 mins. finally take the meat out, let it rest for 5 mins and cut it into thin strips about 0.5 cm each.
