Add warm milk,melted butter,and egg yolks. Mix well until no lumps, cover with cling wrap and rest for 10minutes or until the surface forms bubble air. Add remaining flour(225g) , combine with spatula until form a dough. Knead the dough for 5 minutes. If the dough is sticky, dust lightly with the flour and continue kneading until hand clean and dry. Cover with cling wrap and let it proof for 45 minutes-1hours or until doubled in size. Turn the dough out onto a floured worktop surface. Using a rolling pin, roll the dough out until ½ inch thick. Using a 6cm round cutter,cut into 24 doughnuts. Using the small circle cutter to cut the small hole in the middle of round dough. Re-roll the scraps and cut more. Place the doughnuts on a baking tray,cover with a towel and let it rise for 20 mins or until puffed. Preheat the oven to 190°C (375°F). Bake uncovered doughnuts over a preheated oven for 8-10 minutes or until lightly golden on top. Right out of the oven,brush the doughnuts with melted unsalted butter and roll in a bowl of caster sugar to coat lightly. (Optional) Place the doughnuts at the cooling rack and wait for it to cool enough to handle. Prepare the chocolate frosting. Add chocolate droplets,unsalted butter,golden syrup and water in a bowl and double boil it until fully melted and smooth.
