Take a small amount from the top of the run and look to cut to tails at around 60% abv. Split the distilled spirit in half. Macerate one half at 60c with the following for 1 hour: 2g hyssop 4g petite wormwood or mugwort 1.5g lemon balm 8g yerba mate (add this in with around 40 min to go) Combine the two halves back together and proof down to your desired ABV (I went with 60%).
