How to make Japanese Miso soup without using Dashi or any stock. I tried to make Miso soup without using Dashi. Making tasty Miso soup not using Dashi is taking Umami taste from vegetables. Why Japanese Dashi is tasty? because Japanese Dashi has Umami. the Umami taste comes from the presence of the Amino acid. for the taste, there are 3 type of Amino acid. Glitamic acid, comes from vegetables. and Guanylic acid from dried mushroom, like dried Shiitake mushrooms, dried porchini mashrooms. then Inoshinic acid from fish and meat. So, to make tasty Miso soup need vegetables which highly contain glutamic acid. what vegetable contains high gultamic acid? onions, carrot, green peas, soy beans, sweetcorn, potatoes, cabbage, chinese cabbage, lotus roots, asparagus and so on. especially riped tomato contains a lots. using different Amino acid makes much better. for example, Japanese Dashi made from dried bonito fish and Konbu seaweed. this is matching with Gultamic acid and Inosinic acid. try take a look in your fridge and use variety of vegetables. and cook the vegetable with little of water first and let the vegetable to release their Umami and then add more water, then Miso paste. check the taste before serve, because saltiness is all different each Miso product.
