Tap Join to become a sponsor — your support keeps the no-flour, high-protein, low-carb recipes coming! / @keto_kitchen 📌 Ingredients Zucchini crust: 1 medium zucchini, coarsely grated, well wrung 1 egg 1 cup (100 g) shredded mozzarella pinch of Italian herbs pinch of salt olive oil, for the parchment/pan Topping & sauce: 1 lb (450 g) shrimp, peeled and deveined 1–2 garlic cloves, cut into 2–3 pieces each 2 rosemary sprigs 2 Tbsp (30 g) butter 1 ball (125 g) fresh mozzarella, torn ½ small red onion, thin half-rings 1 cup (150 g) cherry tomatoes, halved chili pepper, to taste (optional) 2 Tbsp grated Parmesan, plus extra to finish (15-17 g) small bunch parsley, finely chopped salt and black pepper, to taste 👩🍳 Method: Crust: Grate zucchini, wrap in towel, and squeeze out as much liquid as possible. Mix with egg, shredded mozzarella, salt, and herbs. Spread on oiled parchment as a round base. Bake 200°C / 392°F, 15 min until set and lightly golden. Shrimp in garlic–rosemary butter: Heat butter with garlic and rosemary; add shrimp and cook ~2 min per side (use tongs to flip — quick and precise). Spoon the flavored butter off the pan — this is your sauce. Assemble: Top the baked crust with torn fresh mozzarella, then the shrimp. Spoon over the garlic–rosemary butter. Add red onion, cherry tomatoes, and chili (optional). Sprinkle Parmesan. Bake again: 200°C / 392°F, 10 min until melty and bubbly. Finish: Shower with parsley and a touch more Parmesan.
