Lacto fermenting Jerusalem Artichokes can eliminate some of the gaseous effects of eating these delicious vegetables raw. Have you tried fermenting them? What did you think? I tried it, and I really didn’t enjoy the results, even when they went as planned – which wasn’t always. This is the story of my epic failure, and equally disappointing success, fermenting Jerusalem artichokes. Jerusalem Artichokes, also known as sunchokes and topinambur, are a relative of the sunflower. They produce underground rhizomes that are deliciously sweet with a pleasant crunch. Unfortunately, they also contain a sufficient dose of inulin to make them difficult to digest, resulting in the nickname “fartichoke”. In this video, I’ll give you two possible remedies to this problem. The first, but not the easiest, being lacto fermentation.
