Some days are just meant to be slow. Morning tea, a lake walk with melting ice and swans, a grocery run, and cooking three meals I genuinely loved. This was one of those days. If you made it to the end, thank you for spending this quiet day with me. 🤍 Chapters 0:00 intro 0:36 new couch delivery 🛋️ 1:03 morning tea ☕ 1:45 grocery run 🛒 2:10 coming home — dog greets me at the door 🐾 2:20 coffee & breakfast — butter apple oatmeal 🍎 3:50 lunch — salmon 🐟 5:30 making the chimichurri sauce 🌿 7:15 dinner — soba ramen bowl 🍜 🍎 Butter Sautéed Apple Oatmeal (Serves 2) Ingredients: 1 cup rolled oats, 2 cups almond milk, 2 apples sliced, 1 tbsp butter, 4 dried figs chopped, handful of walnuts, 1 tsp cinnamon Instructions: Sauté apple slices in butter until golden, about 5 minutes. Cook oats in almond milk until creamy, about 5 minutes. Top with apples, dried figs, walnuts and cinnamon. 🐟 Baked Salmon with Chimichurri (Serves 2) Ingredients: 2 salmon fillets, 2 tbsp olive oil, 2 tbsp soy sauce, 2 garlic cloves minced, 1 tsp mustard — Chimichurri: large handful parsley, 1 small red pepper, 2 garlic cloves, 3 tbsp olive oil, 1 tbsp vinegar — Salad: 2 handfuls arugula, 1 tbsp olive oil, 1 tbsp balsamic Instructions: Bake salmon at 200°C for 10 minutes. Mix olive oil, soy sauce, garlic and mustard, pour over salmon and bake 5 more minutes. Blend chimichurri ingredients and spoon over top. Serve with arugula dressed in olive oil and balsamic. 🍜 Soba Ramen Bowl (Serves 2) Ingredients: 200g soba noodles, 2 chicken fillets, 1 zucchini sliced, 150g mushrooms sliced, 1 head broccoli, 3cm fresh ginger grated, 3 garlic cloves minced, 700ml chicken stock, 2 tbsp white miso paste, 2 tbsp soy sauce, 1 tbsp olive oil Instructions: Sear chicken 3–4 minutes per side until golden, set aside and slice. Sauté zucchini until golden then add mushrooms. Blanch broccoli 2 minutes. Cook soba noodles according to package. Simmer stock with ginger and garlic 10 minutes, stir in miso and soy sauce. Build your bowl — noodles, broth, vegetables and chicken on top.
