Unlike Pampanga Tamales, which are topped with pork, poultry, and eggs, Zamboanga Tamales are loaded with vermicelli noodles and prawns. Tamal De Zamboanga Ingredients: Banana leaves for wrapping Masa/Dough Recipe: 3 cups Rice flour 5 cups Coconut cream 1 Tbsp Pepper 2 Chicken Broth cubes 1/4 cup White Sugar Filling: 300 grams Sotanghon 1/2 Cup dried Shrimps 1/2 kilo cooked and shreded Chicken meat 1 tbsp Ouster sauce 1 tbsp Soy Sauce 2 pcs chopped Onions 1-3 cloves of chopped Garlic 3 boiled Egg (sliced) Oil for sauteeing Procedure: Saute onion and garlic then add shrimp and chicken. On the same pan add the soy sauce, oyster sauce, water and salt then mix. When boiling add sotangahon and set aside let it cool. Cook the dough Pour the cream in a saucepan then the rice flour add black pepper and broth cubes then mix well to avoid the lumps, turn on the fire in medium heat and stir continuously.
