What's the deal with pumpkins, and why is it such a popular fall flavor? Oftentimes, the taste we associate with pumpkin is not actually from the vegetable, but rather from the spices that are added. So why do people go crazy over pumpkin? Saint Louis University American studies professor Cindy Ott, Ph.D., says it is because of the reverence for old times that are associated with pumpkins. Even today, the majority of the country's pumpkins are grown on small family farms, and she says people have an inherent attraction to this way of life that so many families left during the industrial revolution. Saint Louis University (http://www.slu.edu) is a Catholic, Jesuit institution that values academic excellence, life-changing research, compassionate health care, and a strong commitment to faith and service. Founded in 1818, the University fosters the intellectual and character development of more than 13,000 students on two campuses in St. Louis and Madrid, Spain. Building on a legacy of nearly 200 years, Saint Louis University continues to move forward with an unwavering commitment to a higher purpose, a greater good.
