Today I'm brewing up a 3 gallon batch of Berliner Weisse on my Anvil Foundry 6.5 gallon brew system. (first batch!) I think it's also time to add some fruit to that quick sour beer we made in the last episode. There's some debate about whether Brett is needed in a Berliner. I've tried both kinds and I prefer the gnarly version. Since we'll be adding brettanomyces to this beer during secondary fermentation. I'm using a step mash technique to try to encourage the formation of complex sugars. The saccharomyces should keep to simple sugars during primary and the brett will eventually move on to the complex in secondary. Now, let's make some beer!
