Welcome to the Dining Traveler Cooking Series! This video is extra special because we filmed it at the start of 2023, but because of "cosas de la vida" (things of life), we just published it now. Ensalada de pulpo (Puerto Rican octopus salad) is one of my favorite Puerto Rican dishes. My parents used to make it for me when I used to visit because they knew it would make me happy. I spent my childhood in Guayama, Puerto Rico, and we used to go to beach restaurants along the island's southern coast. I always asked my parents to order a cup of octopus salad for me with a side of tostones. At first, my dad made this recipe, and then my mom took over when he passed away. Sadly, my mom passed away last year, and I found solace in making some of our beloved dishes that brought so many memories. For those of you who still have your parents, make sure to reach out to them, give them hugs, and record your family traditions to bring to the next generation. Ensalada de Pulpo Recipe: Ingredients: 1 lb of octopus (raw or pre-cooked) 1/2 green pepper diced 1/2 cup of cherry tomatoes, halved 1/4 red onion thinly sliced 1/3 cup olives, halved 2-3 tablespoons extra virgin olive oil 2 tablespoons white vinegar Salt and pepper Instructions in Video.
