Cooking Tips & Tricks Choosing the Fish: Use good-quality salted fish like dried mackerel, cod, or anchovies. If it’s too salty, soak it longer to remove excess salt. Balancing Flavors: Since salted fish is already salty, taste the curry before adding extra salt. Tamarind or tomatoes help balance the saltiness. Serve the Salted Fish Curry with some steamed rice. this tastes best when had the next day* Ingredients 1 cup lima beans 300g salted fish with bones preferred for this dish 0.5 cup oil for frying + 2 tbsp (only if necessary for sautéing) 1 tsp fenugreek 1.5 cups of shallots 0.5 cup garlic 2 inch ginger 1 green chili 3-4 dried chilies 1 sprig curry leaves 1.5 cup of water +1.5 cup of water 5 tbsp chili powder 3 tbsp fish curry powder 0.5 tsp turmeric powder 1 brinjal + 1 potato + 2 sticks moringa/ drumsticks + 2 tomatoes 1/3 cup tamarind water (lime size tamarind) salt, reduce slightly than normal Method 1. Rinse and cook the lima beans till soft. Keep aside. 2. Wash and soak salted fish in hot water for 5mins. 3. Heat pot with oil. Fry slightly the salted fish and remove from the pot 4. Add oil if needed. Add fenugreek followed by shallots, garlic, ginger. Sauté for 2 mins. 5. Add green chili, dried chilies and curry leaves. Stir all till slightly brown. 6. When brown, add water, chili powder, fish curry powder and turmeric powder. Let it boil. 7. Add brinjal, potato, moringa / drumstick, tomato es and water. Let the vegetable soft. 8. Once the vegetables cooked, add in cooked lima beans, salt and tamarind water. Stir well. 9. Reduce the flame and add fried salted fish. Stir gently and off the flame after 2mins.
