This Thanksgiving, I'm so excited to share my favorite turkey recipe with you! 🦃 It's juicy, tender, and packed with flavor. Let's celebrate gratitude and togetherness with a recipe that's simple to make but guaranteed to impress. Wishing you all a warm, happy, and delicious Thanksgiving from my kitchen to yours! 🍂❤️ 9 kg turkey 7 small carrots, chunked 8 stalks of leek, chunked 2 red onions, quartered 2 onions, quartered 8-10 wooden skewers For the spice mixture; 3 sprigs of dried sage 1 tablespoon thyme 1 tablespoon ground ginger, until can use fresh as well ⅓ cup olive oil 1 tablespoon of salt 1 teaspoon of black pepper For the top, 500 ml olive oil, 2 cups Cheesecloth, muslin or towel 3 tablespoons butter 6 tablespoons quince marmalade For the sauce, 2 tablespoons of flour 3 tablespoons of vinegar Half liter of broth, 1 heaped teaspoon salt Take the turkey out of the fridge before 2 hours. This way, the turkey will reach room temperature. Spread carrots, leeks and onions on the bottom of a wide and deep oven tray. For the spice mixture, place the dry sage in a mortar and lightly pound it. Add the ginger, thyme, salt and black pepper and give it a mix. Pour olive oil and make a paste. Spread this mixture inside of the dried turkey so all the flavors will surround the turkey during baking. In order for the turkey to maintain its shape, it is necessary to fix its wings and legs. To do this, first close the underside of the turkey with thin wooden skewers as if sewing and stick the end towards the tail. In the same way, sew the skin on its neck to its meat. The skin will shrink out as it cooks, so it is important to do this. If your turkey has neck on, you can skip this step. Then, stick the wings with skewers to the sides so that they do not open while cooking. Stick two wooden skewers from the tip and middle of the wing. For the middle part, you can easily stick a skewer from the middle of the elbow. After sticking, go along the cavity of the turkey from the inside and stick it to the opposite side so that it does not open. Now it is time for the legs. Knot the two legs together with a baker's twine and then hold it upright with a wooden skewer so that it doesn't lose its shape while cooking. The turkey will cook for about 4,5-5 hours, we will cover it with muslin dipped in olive oil, so that the outside doesn't burn while the inside is cooked. Place the turkey covered with muslin in a preheated oven at 180 degrees without an upper and lower fan. In this way, the turkey will cook for approximately 4.5-5 hours. During cooking, every 30-45 minutes, moisten the turkey with oil and water underneath and if the towels are dry, oil them again. Otherwise, the towel will stick to the skin and the skin will tear. Use the formula 90 min + (kg x 20) to calculate the baking time of the turkey. For example, for a 5 kg turkey; 90 + (5 x 20) = 190 min. You can use 0,45 kg for 1 lbs for conversion;90 + (lbsx0,45x20)= After 4-4.5 hours, remove the turkey from the oven and remove the muslin. Mix the butter and quince jam and spread it over the turkey. This will give the turkey a nice color and a slight sweetness. Bake it uncovered for another half an hour. It is best to let the turkey rest for about 2 hours after baking, but if you are impatient like us, let it rest for at least 45 minutes or 1 hour. To prepare the sauce, pour the fatty juice in the tray into a beaker. The oil will rise to the top. Set aside that oil to use in soups and dishes later. Pour the delicious water at the bottom back into the tray. Add the flour and saute for 2-3 minutes. Add the broth and vinegar or wine if you wish and mix. After the sauce has cooked on low heat for 20-25 minutes, strain it and put it in a pot and cook for another 10 minutes, the delicious sauce is ready. Don't forget to remove the skewers from the turkey before eating it. You can pull the legs and wings as they will easily separate from the bone. When it comes to the breast, cut from the right and left of the bone in the middle of the breast and go downwards, and when you get to the ribs, you can easily cut them by turning the knife outwards.
