This is a Syrian dish full of flavor and very healthy and good for you not to mention it is gluten free and vegan. You can enjoy it with pita brad by itself or with lebneh (thick yogurt) or over rice. #eggplantspickles مكدوس Ingredients : About 15 small eggplants washed ( Keep te head or the stem) 1 cup walnuts chopped very small 1/2 cup red pepper chopped very small 1 tbsp crushed garlic or less 1/2 Tbsp red hot pepper flakes salt olive oil Steps: 1-In a medium pot bring some water to boil then drop in carefully the eggplants. 2-Weigh the eggplants down with a small plat to insure that the eggplants are all under the water and they all cook the same. 3-cover and boil for about 20 minutes. They should be soft and not mushy. 4-remove the heads and leave to cool to down completely. 5-Make a small slit in each one and sprinkle generous amount of salt inside and out. 6-Arrange in a colander and cover with a plat and top the plat with a weight. Put everything over a bowl then keep in the fridge for 1-2 days. This procedure will make the eggplants to get rid of of any reserved water and also to get ride of any bitterness if there is any. 7-Prepare the filling by mixing walnuts, red pepper, red pepper flakes, garlic and a pinch of salt. 8-Stuff the small eggplants with the filling. 9-Arrange the stuffed eggplants in a clean jar. 10-Pour a good guilty of olive oil up to top until all is covered. 11-Cover the jar with the lid and leave in a room temperature. They will be ready within 5-7 days. 12-If you keep the jar outside after opening, you have to keep the olive oil lever above the eggplants at all times otherwise keep in the fridge.
